Burrata is a traditional fresh cheese from Apulia. It is rindless and it is characterized by a soft stretched texture with the addition of double cream. Its peculiarity are the stretched cheese fibres in the texture. It shows a milky white colour. It is produced all year round.
The first taste impression is the fresh, salty taste, which is almost like a sea breeze. In the mouth, the burrata is soft and elastic, but not rubbery. The heart is creamy with light notes of fresh milk and yogurt, which combine to create a light and tasty treat.

Storage In a controlled temperature refrigerator; extract it from the fridge a couple of hours before you taste it. Once opened should be eaten the same day.

How it's made As with normal mozzarella, also for the mousse of mozzarella, the pasteurized milk is inoculated with serum graft for acidification. The heating and the addition of calf rennet follows. When the coagulation occurs, the curd is broken. The next steps are the spinning, where the curd is spun with boiling water and hand-wrapping small potted sack bags where cream and straw are added inside.
