Càlem Monte Alto IGP Sebino

Monte Alto Curtefranca Bianco is a blend of Chardonnay and Pinot Nero which are harvested in different moments and vinified separately and then blended before being bottled. The hand-harvest takes place after a careful selection in the vineyard. After the pressing, musts are cooled and then removed from the lees for 36 days before being inoculated with selected yeast. The controlled temperature fermentation is carried out in steel tanks and lasts about 15-20 days. After this period of time the wine stays in the steel vats for the refinement before bottling, which takes place in the spring after the harvest.
