How it's made For the production of the venison ham, the legs from the best animals are used. Once the leg is clean, it is then cut and salted with sea salt, mountain herbs and spices. The salting lasts for several days during which the experts massages the meat delicately. The curing of the ham takes place in dry and aired rooms; when the ham gains its perfect texture, it can be released on the market.
