Ai Suma Braida

Barbera d'Asti Ai Suma, the flagship of the production of the famous winery founded by Giacomo Bologna called Braida", the term "ai suma" in the local dialect means "ge got it", meaning that we have reached the level of quality we had in mind! This wine is a selection of the best Barbera vineyards in Rocchetta Tanaro and not every year is produced because not every year "ai suma." Barbera is harvested when it's slightly over-riped and transported to the winery for wine making, fermentation with maceration lasts for about 20 days during which the grapes give the wine-must a large amount of compounds responsible for the structure and taste of wine. Then the wine is separated from the skins and placed in French oak barrels for 15 months followed by the blending and bottling. The time of bottle aging chosen by Braida before release is 12 months."
