Barone Pizzini Franciacorta Animante

Franciacorta Animante Brut by Barone Pizzini comes from organic Chardonnay, Pinot Nero and Pinot Bianco grapes. From the middle of August to the start of September grapes are hand-harvested and brought to the winery for the pressing. Musts are clarified and left to ferment in controlled temperature steel tanks and in French oak barrels. Fermentation lasts for about 15 days at a temperature of 15-18°C and after this process wine is refined on fine lees for 5 months before blending. During bottling sugar and yeast are added in each bottle for the second fermentation which will create the much loved bubbles. After 20-30 months of lees contact, depending on the disgorging, wine is then released.
