Ben Rye Passito di Pantelleria Donnafugata is the famous sweet Sicilian wine made from Zibibbo (Moscato) grapes. The vineyards grow on the beautiful terraces in Pantelleria and plants placed inside of a basin to protect them from salt carried by the wind. The harvest begins after August 15 with Grapes intended to dehydrate under the sun and the wind for about 20-30 days. The harvest continue during the month of September with the grapes that has to be processed fresh. These grapes are then pressed and the must is fermented in stainless steel tanks and added of dehydrated grapes that will give up to the fermenting must an extraordinary legacy of sweetness and aroma. The wine at the end of the fermentation age for 7 months in steel and 12 in bottle before release.
