Sauvignon Piere is a wine made by Vie di Romans, the multi-award winning wine producer from Friuli. This Sauvignon Blanc comes from a particular cru, called Piere, a vineyard with Sauvignon Blanc plants of at least 20 years of age. This vineyard faces North-South and presents a clay, drainable soil that is excellent for the production of great Sauvignon wines. The grapes are harvested when fully ripened and they are then brought to the winery for de-stemming and then cold maceration in an oxygen-free environment. The skins are in contact with the must for a few hours (depending from the vintage) at a temperature of 8°C in steel tanks, where the atmosphere is saturated with carbon dioxide. The skins are then separated from the must which is then put in temperature controlled steel tanks for the alcoholic fermentation that is carried out at 17-19°C for about 16 days. The wine refines on fine lees for 7 months, during which it ages and it can complete its aroma and flavour profile before being bottled. 10-month bottle ageing takes place before releasing.
