Barbaresco Ceretto is a wine produced from a 4.84 hectares vineyard from a cru called Roncaglie. Nebbiolo is manually harvested around the end of September, brought to the cellar for de-stemming and vinification. No selected yeasts are added and the alcoholic fermentation is completed in 15 days followed by 10 days of post-fermentation maceration. Then the wine is separated from the skins and placed in French oak Tonneaux aging for 12 months which is followed by 12 months in steel tanks before blending and bottling.
