Sassicaia is probably the most famous Italian wine in the world, the Marchese Mario Incisa della Rocchetta recognized the potential of the Bolgheri area in order to produce wines of extraordinary elegance and structure as the great wines produced in Bordeaux. Bolgheri is a very particular terroir: close to the sea and soils of a particular composition making it an incredible place for the production of wine grapes. In Bolgheri they are cultivated international varieties like Merlot, Cabernet Sauvignon and Cabernet Franc that in this area are expressed as well as in no other place in Italy creating legendary wines like Sassicaia, thus justifying their price. The harvest begin around the beginning of September and last for about three weeks waiting for the right degree of phenolic ripening of the grapes. Once the grapes are manually harvested a bunch selection on a vibrating table is performed before being de-stemmed and conveyed in stainless steel tanks for the alcoholic fermentation. This process takes place in about 10 days which are followed to another 5-8 days of post-fermentative maceration. The polyphenols in the skins of  are disclosed in wine enriching the taste and the flavor profile. After fermentation the skins are separated from the wine, and it is conveyed in French oak barrels for about 24 months of aeging before blending and bottling. Sassicaia rests in the cellar for 6 months before release.
