The Saliceto farm, producer of the Parmigiano Reggiano, is located on the Emilia Romagna Appenines at an elevation of 500 m asl. The peculiar feature of this Parmigiano is that the entire production cycle takes place in the farm, from milking to the production of the Parmigiano. Also the fodder used for the cattles are produced in Saliceto, a sustainable company that uses no chemical fertilizers or pesticides. Only the manure from the cattles is used as fertilizer. The cows, owned by the company, are mostly Italian Frisona and Bruno Alpina cattle breeds.
