The Burratina is the typical Apulian cheese with a heart of stracciatella covered with a shell of mozzarella. The burrata in its mignon version is called burratina and can be produced with or without head. The stracciatella is the inside of the Burratina and corresponds to numerous strips of mozzarella that are made by manually tearing the spun dough and adding fresh cream (obtained by centrifugation of whey, residue of the processing of mozzarella).

How it's made Like normal mozzarella, pasteurised milk is inoculated with natural whey for acidification. The milk is then heated with the addition of calf's rennet. As soon as it is coagulated, it is ground. Then the cheesemaker spreads the curd with boiling water and, by hand, makes a sack shape until the consistency is elongated. Cream and mozzarella fibres are added to the bags.
