The cheese has a soft and very light paste enclosed within a soft and creamy rind. This cheese, obtained through the long maturation of the 3 milks that gives rise to a delicate curd worked by hand, is characterised by its great sweetness, with sensations of butter and cream, accompanied by acidulous notes and yeasty aromas.
