The 'i Porci Comodi' cooked ham from the Brizio charcuterie is produced from pigs raised in the wild. These pigs are raised outdoors, moving freely in the bush and feeding on nature's wild offerings (acorns, chestnuts, roots, grass, etc.). The food ration is supplemented with certified vegetable feed to ensure maximum animal welfare. The name derives from the fact that the pigs are free to move 'comfortably' and therefore the meat is riper, firmer and certainly has a lower moisture content.
