Prosecco Bisol Vigneti Del Fol is a wine made with Glera grapes which come from the area called 'Del Fol' that stretches from the south of Cartizze through the hills until S.Stefano where the company Bisol is located. The Glera grapes are hand-harvested and brought to the winery for pressing. Selected yeasts are added to the musts and then put in temperature controlled steel tanks. Here the alcoholic fermentation is carried out at a temperature of 16-18°C for around 2 weeks. Afterwards the wines are blended and poured in a stainless steel vat, called an autoclave. Yeasts and sugar are then added for the second fermentation (this second fermentation process is called Martinotti or Charmat method). Once this stage is ended, the wine is poured and bottled only in isobaric conditions in order to avoid damaging the bubbles.
