Gavi di Gavi Deltetto is a white wine made from Cortese grapes that are locally called Gavi. The grapes are harvested around the middle of September and brought to the winery for pressing. The musts are inoculated with selected yeasts and fermented in steel tanks at controlled temperature of 16 ° C for about 15 days, then the Gavi di Gavi Deltetto refines on its fine lees for a few months before blending and bottling.
