Best Italian Pesto

Pesto is a sauce mainly used to flavor pasta dishes, the most famous and pesto par excellence is undoubtedly the Ligurian Pesto or Pesto Genovese made with basil from Pra, Parmesan cheese, garlic, pine nuts, pecorino and coarse sea salt. All these ingredients in pesto maintain an aromatic fragrance and flavor because the pesto is made by pounding with use of a pestle and a mortar so ingredients are fresh and not cooked. In Italy there are other examples of pesto that you will get more or less in the same way but with different ingredients depending on where this specialty is produced: Sicilian Pesto, Pesto Trapanese.
