At the moment of ripeness (in late October) Turbiana grapes are harvested and fermented by macerating with skins as it is done for red wines, for about 20-30 days in this way the skins give to Lugana DOC Ottella Back to Silence wine the compounds that make it an extremely structured and fragrant wine. Lugana DOC Ottella Back to Silence wine is an example of how a white grape like Turbiana can be used for vinifications very different from the traditional ones giving however excellent results.
