Pinot Grigio Sanct Valentin Alto Adige DOC comes from the best plots of Pinot Grigio in the vineyards of the municipality of Appiano Monte located between 450 and 600m above sea level. The Pinot Grigio vineyards are between 10 and 32 years old and are therefore in the perfect age to produce wines of extraordinary quality. The grapes are harvested by hand in mid-September and fermentation takes place in oak tonneaux. In the same containers, the Pinot Grigio Sanct Valentin Alto Adige DOC wine undergoes malolactic fermentation and aging, which lasts for about a year before blending, after which Pinot Grigio Sanct Valentin Alto Adige DOC remains in steel vats for 6 months before bottling.
