Roquefort AOC Cantorel is a raw sheep's milk cheese produced in the Roquefort-sur-Soulzon region of France since 1070. This cheese was the first to be granted Protected Designation of Origin (PDO) status in 1925, due to its unique characteristics and thousand-year history. Roquefort is made using milk from ewes of the Lacaune breed, which is collected and mixed with a natural ferment of Penicillium Roqueforti, found in the Roquefort caves. The cheese paste is soft, creamy and white in color with blue veins, giving it a strong and intense flavor. Roquefort PDO Cantorel is aged for at least three months, during which it develops an intense and persistent aroma, making it unique.
