Barone Pizzini Franciacorta Saten

Barone Pizzini Organic Franciacorta Saten is the exaltation of the Organic Chardonnay of the company. The Chardonnay is selected from the best vineyards to create this great wine. The grapes are hand-harvested around the end of August and brought to the winery for the pressing. The must are clarified and inoculated with selected yeasts, the fermentation is carried out at controlled temperatures and last about 15 days. Afterwards the Chardonnay wines rest in steel tanks and then in oak barrels for few months before blending and making of the cuvée, which are then bottled and sugar and yeast are added for the second fermentation. The second fermentation of the 'metodo classico' wines takes place in the bottle which allows the creation of the bubbles. After the second fermentation the Saten Barone Pizzini rests on fine lees for 40 months before disgorgement (uncorking and then corking of the bottle with the typical mushroom-shaped cork of the Spumante wines).
