Franciacorta Monte Rossa Cabochon

Monte Rossa Franciacorta Cabochon is a symbol of the Franciacorta wine, the grapes that compose Cabochon is derived from Monte Rossa cru only present on Monte Rossa hill that is located in the south of Iseo Lake and near the hilly area from the pre-Alps. In this area there is an important air circulation caused by thermal exchanges between the plains and foothills of the Alps; this creates the perfect conditions for ripening of the Chardonnay and Pinot Noir of Monte Rossa cru. The grapes are harvested around the beginning of September and taken to the cellar for a gentle pressing, fermentation of sparkling bases takes place in oak barrels. The Monte Rossa Franciacorta Cabochon is then bottled with added sugar and yeast for fermentation in the bottle that occurs in about 20 days which followed about 40 months of aging before disgorgment.
