The Brunello di Montalcino by Biondi Santi is one the most well-known Italian wines in the world. It is a fundamental piece of the Italian wine history. The Sangiovese Grosso, called Brunello, is harvested in the second half of September and the grapes are immediately brought in the winery to be destemmed and fermented. The grapes are put in temperature controlled steel tanks where the fermentation with skins maceration lasts around 15 days at a temperature of 28-30°C. Here the skins gives the wine their aromas and polyphenols. Once drawn, Brunello stays in Slavonia oak barrels for 3 years and then bottled. Bottle ageing lasts 4 months before being released on the market.

Terroir The Tenuta Il Greppo has 25 hectares planted with Sangiovese Grosso 13 of these with old plants and 12 with new and very recent ones. Vineyards stand on a series of hills which are next to each other and characterized by deep slopes called Greppi and they are at an elevation of 385/507 m asl. Estate's soils lack in organic matter and they are rich in galestro that according to Franco Biondi Santi allows the Sangiovese to ripen by synthesizing some important compounds which make Montalcino grapes finer than others. Regarding the climate the hill of Montalcino is very peculiar; it is protected from the frosty springs and aired during the ripening months conditions that keep the grapes healthy even with humidity and rainfalls. This is a unique terroir that made Montalcino one of the most important wine regions of the world.
