Riccio is a cheese produced at high altitude in Val Cavallina from the Paleni dairy. The vaccine milk used comes from pastures in Val Cavallina and Val Seriana. The cheese that is produced is semi-white, with a white mold covering the crust, it is an edible mold that gives the cheese an aroma that resembles moss. It is a short maturing cheese, excellent accompanied by a good red wine and a salami like bresaola.

How it's made The milk used is that vaccine coming from mountain pastures. Half of raw and half pasteurized milk is processed and added with rennet. The curd is broken and the forms of the Riccio cheese are created. It is seasoned for about 30 days. The mold that is created on the crust is edible and features the cheese aromatically.
