Amarone Piovesole comes from the naturally dried grapes of the varieties of Corvina veronese, Corvinone, Rondinella, Croatina, Teroldego, Merlot, Molinara and Oseleta. The grapes are hand-harvested and left in the fruttaio to dry out for about 100-120 days during which the bunches loose their water, and sugar and polyphenol are concentrated. The slow fermentation on the skins lasts for about 30-35 days and afterwards the wine rests in 25-hl French oak barrels for 48 months. Then blending and bottling take place.

Terroir Il vigneto Piovesole si sviluppa su 14 terrazzamenti a 200-300 m sldm di altitudine ogni terrazzamento è sostenuto con dei muretti a secco e conta 5 filari ciascuno. La forma di allevamento utilizzata è la controspalliera con metodologia di potatura a guyot lasciando 8-10 gemme per germoglio in modo tale da regolare la produzione per l'anno sucessivo. La densità di impianto si attesta a 4500 ceppi/Ha.

Amarone Piovesole is a powerful and elegant wine, excellent paired with red meat and gamey dishes, even spiced and elaborate dishes. Since it is characterized by a 15% of non-native grapes, this wine shows different features from the other types of Amarone. One characteristic is its harshness, which is actually soft and elegant but also more intense than other wines of the same vintage. That is why it is great with fat dishes and blue or long-aged cheeses.
