Chianti Rufina DOCG Riserva Nipozzano

Chianti Rufina DOCG Riserva Nipozzano is a symbol of wine in Tuscany, produced with Sangiovese and complementary grapes (it depends on the vintages but we include Merlot, Cabernet Sauvignon, Colorino and Canaiolo). The estate of the Castle of Nipozzano is about thirty miles east of the city of Florence and the vineyards from which this wine is derived is very ancient, with radical structures well anchored to the soil and able to adsorb many mineral salts giving a fruit well-mature and mature also from the polyphenolic point of view. The grapes ferment in steel tin and the maceration lasts for about 25 days, during which numerous pump-over and delestages are repeated to facilitate the extraction of quality compounds from the skins. Afterwards, the Chianti Rufina DOCG Reserve Nipozzano undergoes malolactic fermentation and begins the refining process in wood that will last for 24 months and will only affect only a part of the wine. After blending, the Chianti Rufina DOCG Riserva Nipozzano wine is bottled and stays in the winery for 3 months before being released.
