How it's made The fresh milk of the morning ham is harvested and brought to the dairy, is inoculated with rennet and lactic ferments. For the production of this cheese the milk is never pasteurized and the whole process never exceeds 40°C. The cheese is enriched with figs making the pecorino unique Once the curd is obtained it is shredded and the shape of the goat is formed. The refining takes place in controlled temperature and humidity cells.
