Il primo metodo classico da uva Groppello vinificata in bianco della storia gardesana. Fin dalla prima edizione del 2008 Centopercento matura lungamente sui lieviti della seconda fermentazione. E’ vitale, slanciato, succoso ed elegante. Il Groppello è sottoposto ad una pressatura soffice, la ferentazione in acciaio e il vino subisce un lungo affinamento su lieviti in bottiglia.
