The Quader de Cavra is a soft paste-washed, made from 100% goat's milk. The Quader de Cavra is produced in Valsassina in the province of Lecco, it is an excellent cheese with a sweet and delicate flavor and good acidity. This cheese matures 35 days in pine crates before being released on the marketed. The rind is white and smooth, the presence of mold on the crust is synonymous with authenticity, the dough is white and cream.

How it's made Goat's milk is inoculated with lactic ferments, veal rennet is added. Once the curd is obtained, it is broken into two distinct moments to obtain the size of a hazelnut. The extracted dough is then put into the characteristics fascere and put in stufatura to give the right degree of acidity. The forms are cold-salted and seasoned in pine baskets.
