San Marzano tomatoes are the ideal variety for making peeled tomatoes thanks to their firm pulp characterised by only few seeds and not much water. Only basil, salt and extra virgin olive oil are added to the peeled tomatoes. The main difficulty in the production is peeling the tomatoes since it requires great care in order not to damage the tomato before putting it in the jar. To make this easier the tomatoes are cooked quickly in boiling water and then the skin is removed. Peeled tomatoes are excellent for cooking vegetables, pizzas and also as a topping for bruschettas.

How it's made The San Marzano peeled tomatoes are made with fresh-picked tomatoes. They are washed, quickly cooked in boiling water and then experienced hands remove the skin without damaging the pulp. The sauce is made at a temperatureof 80°C, it is then poured in containers with basil and salt, hermetically closed and pasteurized to sterelise them.
