Goat cheese is produced with goat’s milk, sometimes mixed with cow’s milk. Usually goat’s cheeses are fresh or short curing with creamy and soft dough, moving forward the aging the dough becomes firmer and cheese aromas accentuate, moving from fresh and sour aromas to stronger and distinctive ones. Goat’s cheeses are usually consumed by those who have allergies so they can avoid consuming cow's milk. For this reason recently the production and specialization concerning these cheeses has increased all around Italy. Goat’s cheeses are usually served with extra virgin olive oil and freshly ground pepper, or covered with aromatic herbs.


Bonino's family is the owner of the Botalla cheese factory in Biella, Piedmont. The milk used in the cheese factory comes from local Biella and Piedmont cows. The cheese factory is made up of technicians and cheese-makers who carefully follow all the different steps of the cheese-making process, from the curdling to the cheese ageing that takes place on fir boards in natural cellars.
