The Gewurztraminer is a grape variety with an excellent aromatic potential. This is because during the ripening, the grape skin gains a great amount of intense aromas which give the wine unique features. After crushing and destemming, the vinification of Peter Zemmer Gewurztraminer takes place through a 6-8 hours maceration in contact with its own must and in a controlled atmosphere (without oxygen) and at a temperature below 10°C. Afterwards, grapes are pressed and the alcholic fermentation is carried out at a temperature below 17°C in order to help the yeast to generate aromatic compounds. Wine ageing takes place in steel tanks for 6 months after the harvest and then the wine is slightly clarified, filtered and bottled. The apparence of this wine is bright, yellow-straw verging on golden.

Terroir I vigneti di Peter Zemmer si trovano nella piana di Cortina s.s.d.v. e le condizioni climatiche della zona sono decisive per la qualità delle uve prodotte. Dal Garda sino a Merano e Bressanone spira l'Ora del Garda un vento he ogni sera concorre ad abbassare l'umidità e per quanto riguarda la viticoltura non permette lo sviluppo di muffe sui grappoli dorati di Gewurztraminer durante l'ultimo periodo della maturazione permettendo di estrarre dalle bucce tutto il potenziale aromatico. I suoli della tanuta sono prevalentemente leggero e poco compatti quindi poco fertili ottimi per una viticoltura di qualità questo unito ad una buona escursione termica tra il giorno e la notte fanno si che questo sia un luogo fortemente vocato alla viticoltura da vino.
