Milk Characteristics and Type of Animals

Kaltbach Gruyère AOP is made exclusively from milk of Holstein and Simmental cows, which either graze freely in the green Swiss meadows or are fed fresh, nutritious fodder from Alpine pastures. These cows produce rich, creamy milk with a fat content in dry matter of 49 percent to 53 percent, which is essential for creating high-quality cheese. The milk used does not undergo filtration that could alter its properties, thus preserving its nutritional characteristics.

How it's made The production of Gruyère AOP Kaltbach is an art that combines tradition and knowledge. After milking, the milk is heated and inoculated with specific bacterial cultures. The curd is then processed by hand, followed by careful pressing. After salting, the cheese is transferred to the Kaltbach quarries, where it is aged for a period of at least 12 months, during which time it is regularly checked by the "Cavemasters" to ensure that it achieves the desired flavor profile. This process allows the characteristic rind to form and the complex flavors to develop.
