from Valpolicella is a typical wine from Veneto, produced with the natives varieties of the area: Corvina, Corvinone, Rondinella and Oseleta. The name Amarone, derives from the word “bitter”(amaro in Italian), created to distinguish it from the sweet wine Recioto from Valpolicella, from wich it has unintentionally origin. Legend has it that the Verona native varieties are not able to get fully riped, so winemakers tried to concentrate through the withering the compounds that grapes had managed to accumulate until the harvest. The Veronese native varieties also have the characteristic of having a structural conformation suitable for withering then the relative ease to dehydration when placed in a well ventilated and low humid environment. Today this is still a very delicate process and it is carried out with more confidence, utilizing environments created specifically for the withering called ""fruttai"": some wineries as Masi, Allegrini, Bertani, Zenato have developed some very interesting technologies for drying the grapes. The grapes in order to be regulated, cannot be crushed until 1st December following the harvest, and the resulting wine has to age in the cellar for at least two years before bottling.
