The vineyard from which this wine comes is called Bocca di Lupo, located in the municipality of Minervino Murge, in the province of Barletta-Andria-Trani. This vineyard lies on limestone soil, with southeastern exposure and an altitude of about 250 meters above sea level. The Aglianico vines grown here are espalier trained and spurred cordon pruned. Aglianico is a native grape variety of southern Italy, known for its ability to produce wines of great structure and longevity. The grapes for Aglianico Castel del Monte DOC Bocca di Lupo are harvested by hand late in the harvest, usually between late October and early November, when they have reached optimum ripeness. The production process involves alcoholic fermentation in temperature-controlled stainless steel, followed by maceration on the skins for about 15-20 days.
