Amarone Riserva East lilium is a wine produced from the typical grape varieties of the Valpolicella which are Corvina, Croatina, Corvinone and Oseleta. The vineyards are situated in the best areas of Valpolicella Classica, the soils are basically composed by limestone and offer the potential for grapes rich in coloured pigments and aromatic compounds. The grapes are manually harvested around mid-September and then are placed in small boxes suitable to withering. These are then placed in sites with controlled humidity and temperature in order to proceed with the drying process in the best possible conditions. This phase is very delicate and lasts for about 120 days until the grapes have lost about half their weight, after that grapes are de-stemmed and placed in 500 L open barrels in which the alcoholic fermentation takes place. During fermentation, for about 20-25 days we are made numerous fullings allowing Amarone riserva lilium est to enrich itself of valuable compounds present in the skins. At the end of this stage the skins are separated from Amarone that is put aging in oak barrels where it remains for about three years. Subsequently, the Amarone wines are blended, bottled and put on the market no earlier than four years of aging in the bottle.
