Barolo DOCG Prunotto

Prunotto Barolo is made with 100% Nebbiolo grapes, which are hand-harvested after a careful selection which takes place both in the vineyard and in the cellar by using a vibrating table. Afterwards the Nebbiolo grapes are de-stemmed and left in temperature controlled steel tanks for the alcoholic fermentation. This lasts for about 15 days at a controlled temperature of 30°C where the skins macerate in the must/wine. Then the wine is separated from the skins and left to age in oak barrels of a capacity of 27,55 and 77 hl for 24 months. The Barolo is then bottled and the bottle ageing goes on for at least 12 months before being released on the market.

Terroir Barolo Prunotto deriva dai vigneti della zona di Monforte Castiglione Falletto e Serralunga. Questi sono territori dai suoli tendenzialmente eterogenei di carattere argillo-calcarei che hanno una influenza pesante sull'accumulo di polifenoli producendo vini dal carattere tannico deciso che hanno bisogno di un medio-lungo affinamento in legno per smussare questa caratteristica ed ammorbidirsi. La forma di allevamento utilizzata è la controspalliera con potatura a guyot e la densità di impianto è di circa 4500 piante/Ha.

Prunotto Barolo is a full-bodied wine with a good acidity which makes this wine easier to drink and for this reason is excellent with red meat and gamey dishes, even spiced and elaborate dishes. Great paired with blue or long-aged cheeses.
