How it's made The fillet is in the lumbosacral area of the animal, parallel to the rib below the lumbar vertebras. It is made up of muscles which the animal does not use much. It is cone-shaped. Once the fat and other parts have been removed, the fillet reaches a maximum weight of 4 kg.
Storage The product is vacuum-packed. If kept in fridge, it is possible to consume it even after 20-30 days from the purchase.

Combinations

The fillet requires a very short cooking time so as not to ruin the meat and its tenderness. Use a hot steel pot before cooking it. Excellent if enjoyed on its own or together with vegetables. Suggested wine: Chianti Classico , Barbaresco.
