This island is famous for the production of passito wines, thanks to its warm and windy climate, ideal for drying grapes. The vineyard from which this wine comes is characterized by volcanic soil, rich in minerals, which gives the wine a particular complexity and intensity. The grapes used are those of Zibibbo, a native Sicilian grape variety, also known as Moscato d'Alessandria, which is perfectly adapted to the climatic conditions of Pantelleria. The production process of Morsi di Luce Zibibibbo passito Florio begins with the harvest, which takes place between late August and early September. The grapes are harvested by hand and then left to dry in the sun for about 20 to 30 days on racks called "cannizzi." This process allows the sugars and aromas to concentrate in the grapes.
