The cube roll is a very tasty cut of beef due to the generous infiltration of intramuscular fat, which allows this meat to remain very tender. It is a popular piece of meat for barbecued meat lovers, although it is a versatile cut that can also be made in other ways. In this guide, we explain where the beef comes from and where to buy it fresh online.

Cube roll: what we are talking about

The beef cube roll is made from adult cattle, usually the breeds chosen for this type of meat are Irish Angus or American Black Angus.

The piece of meat comes from the ribs of the bovine, i.e. the part of the back, and is the largest cut that is made on the carcass of the animal. This type of meat is characterised by a large percentage of fat, ranging from 6% to a maximum of 11%; and it is this particularity that gives it its flavour and tenderness.

The dorsal part that makes up the cut of meat runs from the 4th to the 13th rib and borders the fillet; not surprisingly, it is considered among the most valuable and can be boned to obtain sirloin.

The names of the Cube roll

The cube roll is also called a ribeye - that is, eye of the rib - because of the fat that seeps between the meat and forms a kind of eye. Usually, when reference is made to the ribeye, it refers to the steak obtained from the cube roll; it is also claimed that the name ribeye refers to the longissimus dorsi muscle that characterises it and is located in the middle of the section.

The name cube roll always comes from the same reason, the inner fat can also be more cubic in shape, hence the name cube roll.

Difference between cube roll and entrecote

Usually, the inexperienced tend to confuse entrecote with cube roll; in reality, entrecote is a boneless rib-eye steak made from the end of the sirloin; that is, the three ribs separated from the tenderloin. It is a very tasty cut but slightly leaner than the cube roll, although it still has some pieces of fat.

Compared to the cube roll, entrecote is almost exclusively grilled or barbecued.

How to cook the Cube roll

The cube roll can be cut into a steak or boned and left whole, to prepare it like a roast.

If you decide to barbecue meat, you have to cut steaks that are two to three fingers thick at the most.

The ideal steak for grilling should not exceed 300 g, although 400 g cuts are also possible.

Since it is the part from which the fillet and sirloin are made, the cube roll can also be prepared as a roast by cooking it in the oven. In this case, it is advisable to bind it properly and brown it first in a pan, in all its parts, so that all the juices of the meat are retained inside.
