How it's made The rib-eye steak comes from the sixth to the twelfth rib. Before being sold, the meat is left for several weeks until it becomes high. It is characterized by a part of spinal muscle which makes this cut different from all the others.
Storage The product is vacuum-packed. If kept in fridge, it is possible to consume it even after 20-30 days from the purchase.
Aging Fresh

Combinations

The rib-eye steak is excellent when cooked rare in order not to damage its tenderness and juiciness. Use a fiery pan to avoid that all the juice are released. Serve with potatoes and fresh vegetables and drizzled with some great extra virgin olive oil. Suggested wine: a full-bodied red wine such as a good Chianti or Brunello.
