Prosecco Superiore millesimato di Cartizze Bortolomiol is a wine produced in the famous Cartizze hill in the town of Valdobbiadene. Cartizze hill is very particular, certainly the most famous cru in the entire Prosecco area, presents situations of exposure and soil composition particularly suitable for Glera grape cultivation. The Cartizze hill can give the very fine wines that are converted into Prosecco of an absolute value. Bortolomiol owns vineyards on the Cartizze hill and grapes are manually harvested at the end of September, these grapes are directly taken to the winery for pressing, the musts ferment in temperature controlled stainless steel tanks for about 20 days at a temperature of 16 ° C thus allowing the yeast to release their aromatic potential. The base wines stay in stainless steel tanks on its lees for a few months before blending and being re-fermentated in autoclave, this process is made by adding sugar and yeast and allow the development of the Prosecco bubbles. Prosecco Superiore Millesimato di Cartizze Bortolomiol is then bottled in isobaric conditions and released on the market after about a month.
