Bresaola of Valtellina Ferraro is a typical product of Valtellina, the Ferraro produce Bresaola only from selected meats without the use of preservatives such as nitrates or nitrites in order to guarantee the naturalness of the product. The Bresaola of Valtellina Ferraro is produced with the tip of the hip (or fesa), but also the magatello (or girello), the sirloin (that for the roast-beef). The beef cuts are subjected to salting, spicy, placed in the cell for about ten days, during which they are constantly massaged and turned, finally rinsed and tied before drying and maturing for a month and a half / two months in cells at controlled temperature and humidity.
