The national ham Top quality Brivio, is produced by selected Italian pork legs the same as those used for the production of Crudo di Parma. In this Brivio cooked ham, not many preservatives are added, such as polyphosphates, antioxidants and milk derivatives. The leg is deprived of the bone and then cooked, the result is an amazing and unique cooked ham. The size of the ham is about 9 kg, we recommend opening it and putting it under vacuum. Excellent ham cut fine, sweet and tasty, one of the best cooked hams on the market.

How it's made The selected thighs, divided into homogeneous batches based on weight, are boned manually, closed, trimmed and washed away from fractions of muscle, fat and excess rind. Subsequently, they are injected with brine composed exclusively of water, salts, natural flavors without the addition of polyphosphates, gluten, milk derivatives and glutamate. Boiled aromas are produced using whole vegetables and spices. The thighs are then massaged to completely absorb the brine and soften the muscle masses, in order to facilitate the subsequent molding phase, which consists in positioning the thighs inside the molds for cooking that takes place in steam ovens. After cooking, the hams are cooled, removed from the molds and vacuum-packed.
Storage To be stored in a cool and dry place. Cover the sliced side with a cloth.
