The process of making Brunello di Montalcino begins with the manual harvesting of the grapes, which generally takes place between late September and early October. After crushing and fermentation, the wine undergoes a long period of aging, which for the Riserva type can exceed five years, at least two of which must be spent in oak barrels. The result is a wine of great structure and complexity, characterized by hints of ripe red fruits, spices, tobacco and floral notes, with a full body and soft tannins. Brunello di Montalcino DOCG Col d'Orcia is a wine that lends itself to prolonged aging in the bottle, reaching its full expression several years after the harvest.
