Capovilla Grappa di Ribolla Gravner 0,7L is an extraordinary product, the result of the distillation of the pomace of the Ribolla Gialla vine, vinified by the wine master Josko Gravner in Friuli Venezia Giulia. Gravner being a very good friend and admirer of the art of distillation of which Vittorio Capovilla is one of the protagonists, he delivers these pomace for the production of Grappa to his distillery. The Ribolla Gialla pomace are extracted from the amphorae in which the alcoholic fermentation takes place after 6 months of aging and immediately brought to Rosà at the Capovilla distillery. A raw material of such high value deserves to be treated with great respect and that is why Vittorio Capovilla decides for a process of double distillation that takes place in a bain-marie in small copper stills. The distillate is then placed to refine to facilitate the esterification process that will bring Capovilla Grappa of Ribolla Gravner 0,7L to a full and balanced taste. This equilibrium is reached after a refinement of about 5 years, after which the distillate is diluted with source water to the equilibrium and then bottled.
