Donnafugata La Fuga is a 100% Chardonnay wine, pure expression of the potential of the Contessa Entellina land. Grapes are usually harvested during the first 10 days of August. In order to preserve musts freshness, grapes are hand-harvested at night-time. Afterwards, soft-pressing and settling of the grapes take place. The musts, which are now fined, are inoculated with selected yeasts and the alcoholic fermentation takes place at controlled temperatures. Then wines are refined by extended lees in steel tanks for 6 months before being bottled.

| Terroir | Lo Chardonnay utilizzato per la produzione de La Fuga è coltivato nella tenuta di Contessa Entellina una zona collinare con dei suoli tendenzialmente argillosi ma con una importante dotazione in calcare. Il clima di Contessa Entellina è caratterizzato da inverni miti e da estati molto calde e poco piovose ma l'elevata escursione termica che in alcune annate può arrivare anche fino a 20°C favorisce la maturazione aromatica delle uve venendo ad essere un importante elemento che concorre alla forte vocazionalità della zona. Il sistema di allevamento nei vigneti di Contessa Entellina è la controspalliera con potatura a guyot e a cordone seronato a seconda delle varietà con una densità di impianto che va da 4.500 a 6.000 piante per ettaro. |
