Rocca delle Macie Chianti Classico is made from Sangiovese 95% Merlot and 5%, after a careful selection in vineyard only the best bunches are taken to the cellar for vinification. The grapes are de-stemmed and placed in stainless steel containers for temperature controlled fermentation with skin contact that occurs in 12 days at a temperature of about 28 ° C. Then the wine is separated from the skins and after the malolactic fermentation the aging takes place in Slavonian oak for 10 months before blending and bottling. Chianti Classico Rocca delle Macie rests in the bottle for at least 30 days before entering the market.
