This area is characterized by a Mediterranean climate, with mild winters and hot, dry summers, which is ideal for growing vines. From an agronomic point of view, the vineyards from which Col di Sasso comes are located on hilly terrain, with altitudes ranging from 150 to 450 meters above sea level. The soil is mainly calcareous and clayey, with the presence of skeleton and gravel, conditions that favor good water drainage and excellent ripening of the grapes. Col di Sasso is an IGT (Indicazione Geografica Tipica) red wine made from Cabernet Sauvignon and Sangiovese grapes. The production process begins with the harvest, which is done manually to ensure the selection of the best grapes. This is followed by the vinification phase, which involves fermentation of the must in temperature-controlled stainless steel tanks. After fermentation, the wine undergoes a period of aging. This process takes place partly in French oak barrels, where the wine matures for a period of about 10-12 months, and partly in stainless steel tanks. This combination allows the wine to gain complexity and structure, while maintaining the freshness and fruitiness typical of the grapes from which it is made. Finally, before being put on the market, Col di Sasso is aged in the bottle for a further period of time, to allow the wine to better harmonize its components and achieve the right balance.
