The Coppa Ferrari is the premium range product of the company. It is almost entirely made by hand and only the best Italian pigs are used. To produce this cured meat, the parts of the muscles from the upper cervical region are selected and the their fat is removed. The meat shows a cylindrical shape and it might weigh up to 2.6 kg. It is characterized by a fragrant aroma, typical of this meat. The aroma's intensity and the lasting of flavours in the mouths increase with its ageing, which can go from 60 days to few months.

How it's made Vengono scelti i muscoli della parte cervicale superiore Una volta effettuato il taglio della carne viene salata con il metodo della salagione a secco. Il salume di Parma viene posto in appositi celle di salagione. Al termine dalla salatura il salume viene inserito in un budello di bovino e legato a mano con spago derivante dalla canapa. Segue la stagionatura per un minimo di 60 giorni in questo periodo avviene la disidratazione della carne con conseguente incremento di aromi e incremento del gusto.
