The Timilia is a very old durum wheat variety from the central Sicily. It was abandoned because considered unproductive, Timilia wheat was rediscovered about twenty years ago. Like many ancient grains Timilia has also many positive characteristics: it has a low gluten salt content, also has a lower glycemic impact than other types of grains.
